Today I'm cooking dinner. I went down to Kroeger and bought the ingredients - half of the vegetable section I didn't recognise but I managed to find what I wanted, or at least an approximation.
I'm cooking a beany casserole-type thing with what should be chorizo sausage through it. I've substituted with chorizo with something else - but it looks pretty damned good simmering away.
This is what I did:
Chopped 1 onion, fried in a little olive oil
Added 4-5 cloves crushed garlic (you can never have too much!)
Chopped 2 dried red chillies (I later added another half a one for some extra zing) and added to frying mixture
When the onions were browned I added a bit of chopped green pepper - not too much. This was an experiment because it's one of those thin green peppers and we don't have those and I was curious.
Then I added 2 x tins chopped tomatoes and shook in some mixed italian herbs.
Then came the beans. I used 4 normal sized tins. This time I used butter beans, pinto beans, something called purple skinned peas - but they look a bit like black eyed beans and black beans.
The last bit was adding sliced sausage and a glug of red wine.
It tastes better if you can give it a couple of hours simmering time to let all the flavourings out. If you like your spices hotter then you can add a bit of tabasco later on. I've bought French bread to crisp up in the oven to mop up the juices and I've cracked open a bottle of Fat Tire amber ale while I wait.
I also discovered Reeses peanut butter cups today. Can't remember ever having them before. It's probably a good job we can't get them in the UK or I'd be having an even harder time getting my jeans on.
